Sophie and Chicken Shawarma Pie

One of  the many adventures of my granddaughter, Sophie, this year, was spending three weeks in Jordan, working with Palestinian refugees.  She participated, with other teenagers, in a Choice work/travel program.  On November 13, 2022, I cooked a Palestinian dinner to honor Sophie. Sophie then told us about her trip.
My new cookbook, "Falastin," features the recipes of Sami Tamimi, the co-author of "Jerusalem."  Both Falastin and Jerusalem are award-winning cookbooks.  Jerusalem is written by one Israeli Jewish author, Yotam Ottolenghi,  and one Israeli Arab author, Sami Tamimi.  Falastin celebrates the cooking of the Palestinians.  I made chicken shawarma pie as our entree on November 13.  It was a delicious concoction of chicken in a sauce with spices, cooked inside a phyllo dough crust.

Jordan is east of Israel.  It has a rich Arab culture, and it is the home of millions of Palestinians, who were displaced when the Jews made their home in Israel.

There are miles and miles of refugee camps, from which many Palestinians never leave to build their own homes.
Sophie spent weekdays teaching Palestinian refugees.  On the weekends, she traveled.  One of the sites she visited was Petra, in which an ancient kingdom carved palaces out of the desert rock.
