Jared Christopher visited St. George June 19, 2010, to visit Dave and Grandma Spendlove, and to meet Grandma Spendlove's husband, Darrell. I drove to St. George Saturday afternon to fix dinner for Jared, Grandma, Darrell, and Dave. I brought with me a gourmet cookbook on vegetables, which Jared had given me earlier. I mobilized three good cooks--Jared, Dave and myself--to create a healthy feast.
Dave baked salmon filets. Jared made a sliced vegetable salad with vinaigrette dressing and whole wheat croutons, and I baked winter squash cubes in coconut milk flavored with cardamom and saffron.
We had fresh strawberry rhubarb crisp ala mode for dessert.
Grandma Spendlove and Darrell enjoyed the feast. Dave, Jared, and I enjoyed cooking together almost as much as eating together.
